Summer Salad Series: Week 2: Just Peachy



I don't know about you but we are in the thick of summer over here in Southern Europe and the peach scene is flamessss!

This week's salad combines your classic greens with one of my favorite fruits: the peach.



Ingredients:
Two Grilled Peaches
1/4 Red Onion
Spinach for the Base
Goat Cheese
Olive Oil
Salt 
Pepper
Balsamic Glaze

To Prepare:
Cut peaches into wedges and grill on aluminum foil until brown/soft
Saute onions in olive oil
Meanwhile
Toss fresh spinach and goat cheese
Add onions, grilled peaches and some salt
Finish with balsamic glaze on top. No need to add more olive oil as you can use the rest from the onions.

Note:
Feel free to add pecans, walnuts of hazelnuts...I just happen to be allergic and discount them.
PS- Goat cheese is lactose free!
