Summer Salad Series: Week 1

Team, salads do not have to suck. Making a solid salad is about finding balance. You mustn't feel like you're eating grass, but one's salad should also not account for an entire days worth of calories. (Lookin at you taco salad and cobb salad).

Salads are a means to consume necessary and delicious fruits and veggies- So here's one of my favorites. 

This is actually a recipe from my friend Deb. We were hanging at her pool one day with many a skinny bitch and needed to make something everyone would eat. Enter watermelon, feta and mint.

It may sound like something only your hipster friends from brooklyn might eat, but it's effing delicious so don't knock it until you rock it. If I can get a bunch of mid-western corn dog loving people to like it, you'll enjoy. Promise.



Ingredients:

1 Watermelon
1/2 Cup feta cheese
Fresh mint leaves - Chop as many as you can handle
Balsamic Vinegar - Use your best guess- the salad should still be pink.

Keep chilled and enjoy!
